Tracking overall stock/inventory by the gram

I've been using VM 2.0.20b on a variety of projects for awhile now and am very familiar with it.  However I currently have a project that requires a slightly different type of inventory tracking system.

It's for a herbal supplement company and they want to be able to track overall inventory of a given herbal remedy by gram.  For example, they are selling their "Ginkgo" product in a variety of sizes: by the gram, by 1/8 oz. (7.5 grams), 1/4 oz. (15 grams) and 12 oz. (30 grams).

They want to be able to define their overall inventory (say, 5000g).  Then whenever a customer orders a particular size (e.g. "1/4 oz., 15 grams") the overall inventory level is reduced accordingly: i.e. 5000g - 15g = 4985g.

I know how to set up child products and cart variants but it doesn't seem like those tools would really apply here.  Am I missing something?  How can I set up the type of inventory tracking I described above.  Is VM even capable of this?

In next version of Virtuemart there is a ability to choose the step of adding to cart current product.
In your case it's necessary to have choosable steps for each product (drop down box near add-to-cart-button):
1 grams
7.5 grams
15 grams
30 grams
I could imagine that each variant in this drop down box could be written with the own alias, like this:
by the gram
by 1/8 oz. (7.5 grams)
1/4 oz. (15 grams)
12 oz. (30 grams)

So VM inventory will become gram inventory then.

I recall that in VM 1 there was the option to add custom "quantity steps" to a product.  So you're saying that in VM 2 does not currently have this ability?  And there is no other way to achieve what I'm looking to do with VM 2?

Current version is, as we all know, 2.0.20b.
