probelms with vendor and invoice

I need to make some of the text items "not required" in the additional info tab when trying to setup a vendor it just won't allow me to upload a logo for my invoice without including all that extra info I really don't need as well as being able to remove the Title selection of Mr and Mrs, I don't need this at all.

Quite frankly I don't really need any vendors, I wish there was a way to bypass this altogether, my shop info is all I need to show up on the invoice and

currently it shows up in a one line sentence I would like to be able to change that since all on one line is rather confusing and doesn't look good at all

I would like to format it to just look simple like this on the invoice

store name
address
city,state,zip


any help would be greatly appreciated, THANK YOU for any direction,
