Customized shipping per product?

Hello guys, simple question.... is it possible to assign custom shipping methods for each product? In other words, I can have 3-4 total shipping methods, but some products can only have a single, or some of these methods. Is this possible?

In a similar fashion, can you do this for payment methods and specific products?
