Parent/Child or other cart variant?

I have perused the forum and studied the custom attributes feature until my head started spinning.  At this point I am looking for the path of least resistance to find the simplest solution.  I created a test site and migrated a copy of my live site(J1.1.25/V1.1.9) to the latest Joomla and VM 2.5.4/J2.0.4.  The problem is my parent/child product inherited from VM1.1.  I created a generic parent such as "Lampong peppercorns" and then created three children, one for each bag size, and each with a different price.  In VM 1.1 the parent product would be displayed in the product category view and the product detail page showed a separate add-to-cart button for each child.

I need to adapt my products to VM 2.0.  I do not care about stock levels.  I do not particularly care if each product or child has a separate sku.  I am trying to duplicate what I was able to accomplish with VM.1.1.  It migh be easiest to retain the existing parent/child relationship, but I need to have cart variants using a dropdown list.  Even better if I could display each variant WITHOUT a dropdown, and with a separate add-to-cart for each.  Any ideas what would be the best way to get there?

Maybe I should ask the question another way.  I have parent/child product rerlationship migrated into VM2.0.4.  Only the parents have been assigned to a product category.  Is there a way to have the children become visible and carts variants when someone clicks on the products details icon in the category view?

My understanding is that there are many ways in which custom attributes may be used to display variations of a product.  Is there w ay to view the children already established without assigning then to a promary product category?

This is EXACTLY what I'm after - can nobody help out here? It should be pretty basic.... ?
