Adding vendors and payment options

I'm thinking about using VirtueMart for a new website I'm working on but I have a question before getting started. I have multiple vendors which would like to have access to sell their items on my website.

Can they create their own vendor account or do I have to manually change their user group?
Can they set their own payment information such as PayPal email or is the main payment option in the settings the only way?
