Please, solution for shipment and payment

I have a problem with shipment and payment.
I want to delete or unpublish them.
I have a ristorante site, that sold food for to carry, but with no deliver to house. The customers have to pay and to take the food in the ristorante. Virtuemart is only for to select dishes and do the ordering.
I did some steps for this. I create only one shipment called "Local Retirement", published, with buyers group selected and in configuration with my country (Chile). I also create only one payment called "Local payment", published, with buyer group selected, standard payment method and in configuration with my country. The other fields are for default or with nothing. Nothing have "0" in value.
But yet I still have "shipment" and "payment" in the buyer list (in shopping cart list), and this words have links for a second step where the buyer has no output.
I searched a lot on various forums and tried many ways but can not find the solution.
I just want the buyer does not consider submissions or payments.

You could just cut this in your template overrides.

I saw that you're not total newbie here so I assumed that you already know what is template overrides. Am I wrong or right?
