What can I disable?

The moneybookers module creates errors in my error log.
We only use PayPal Standard.
Can I turn off moneybookers and the other payment choices without creating a problem?

Also, since we only sell in the United States, can I turn off all the other countries and and associated currencies?

Yes,

you could disable all the payment plugin your are not using (that's the right configuration!).

For your second question, yes. First you will choose only $ for your currency and you could disable the rest of them if you want for the backend Configuration -> Currencies, as for the countries did you try from the BE, Configuration -> Countries to disable the countries you do not need?
