How can I start using virtuemart? I'm with prestashop that I start with?

For a new shop download the full package https://dev.virtuemart.net/attachments/download/1145/VirtueMart3.4.2_Joomla_3.8.12-Stable-Full_Package.zip
Of course this need that you setup a database and a domaine to install it.

there are some online services that offer to migrate Presta to VM etc ...  Google for them

only a suggestion .. have never used them

of course if u only have a few products u can manually configure them

Your question is too vague,
Depends on how many products you have you can:
- Manually migrate your store by exporting csv files from your presta then import them to VM (if you only have a handful of products)
or
- Use cart migration apps when you have thousands of products
