I can't see in Configuration the shipping method option : At The Store.
Free shipping method... when the client picks up the order at the store
What should I do to add it?

Use the VM Shipment plugin - "By weight, ZIP and countries" with Shipment Name as "Strore pickup" or whatever and set no charges.
For payment use the VM Payment - Standard plugin, named as appropriate with no charges set.

- but I don't understand if I have to create a new Payment Method or what I need to do then...

If You want the customer to pay at pickup do as follows
- create a new payment
- Name it "Pay at pickup" or whatever
- Choose Vmpayment - Standard
- save payment
- fill in the rest of the payment details
- save payment
done

In fact you showed the point: I don't want a payment at pickup. But I want the customer to pay online and then show invoice at the Store to get the product (perhaps a flashcode would be more secure...). So I don't need to create a new payment.
But now, even if I created the "Store pickup" with VM Shipment plugin, I don't see this option during checkout...
What's the problem?
I missed something somewhere ?

Published: yes
But I let the form blank:
no Lowest nor Highest Weight
no Minimum nor Maximum number of products
no Minimum nor Maximum order amount
no Package fee
no Minimum Amount for Free Shipment
I should fill all that?
I thought that if I let them empty it would be for all cases.
No leave those at the default value. On the first tab you set the store currency and a name for the ship method. Then set it to published, save and job done.
OK it works now. I don't know why my previous attempt was not successfully saved...
