I am in J3.4.5 and vm 3.0.10
in the order email sent to the client and the seller, custom fields are not displayed.
and the seller needs it to prepare his order.
is somewhat must be used to activate something or should I code somewhere?

I'm not sure what might be causing your problem, but would just like to recommend VM Invoice 3 extension from Artio for invoice handling. It is much better than the default VM one.
Are you using template overrides for cart/invoice?
