At the top of the product pages there is a place to choose the number of products to show on each results page. Currently, it says, "Results 1 - 150 of 226". How do I change this to say, "Show" or "Display"?

Also, how do I keep this choice to stick when the customer goes from one page to the next?

It's regular joomla pagination text.

ALSO:
The string more than likely has "vaiables" in it. So make sure not to change them. or the actual numbers will not show.

Also, I have looked all over the configuration section and can not seem to find a place to change the default number of products to show. Where is this located?

configuration/templates Tab.

Set the pagination sequence for the List Box
Backend default items per list view
&& each category also has its own.

The default will only change NEW created categories

Because when you create category, it will be set to whatever is default at that time
