IS there an extension that we can use to create sitemap for all the products in the site assuming that we have not added products or product categories in to the menu structure.

I do not think that there is something available. You can try xml-sitemaps.com. It is not a Joomla component, it works for < 500 pages without costs or as an independent script outside of Joomla (as commercial script).
