I enabled 'notify me' when a product is out of stock.
When the customer clicked 'notify me' and entered his email, shouldn't the shop owner get a notification email? Should he?
I don't get one.
I only see a notification entry in the product admin.
Is this correct?
And is there finally a solution / plugin to notify customers automaticly when the stock has changed, when it's available again?

No You don´t get any notice as admin. There is an old outdated plugin for this.
You can send notifications from product page when You update stock, but not automatically.
