If you want to change the number of sub categories displayed per row on top of the browse pages you have to edit JOOMLAROOT/components/com_virtuemart/themes/default/templates/common/categoryChildlist.tpl.php.

On line 6 you'll see: $categories_per_row = 4;

Change the number to fit your needs.
