Adding details to email order confrimation?

Hi everyone,

I wish to have some data in the payment_extra_info field of a payment method and be able to include it in the order confirmation email that is sent.
What we need to do is allow customer to

• Pay by mailing a cheque or check depending on where you come from
• Pay by Direct Deposit in to my clients bank account quoting the order number

I will be grateful for some assistance here.
