It is from 8 October 2018 that an update does not come out, why?

The last available update is this https://virtuemart.net/news/491-bugfix-release-3-4-2 but if I go here http://dev.virtuemart.net/projects/virtuemart/files I see that other updates have come out and even we are at 3.5, how should I behave? Are the updates stable or should I wait?

There have come several updates for 3.4.2 since oct 2018 9966 to be the latest official release. Vm 3.5 is considered to be for early adopters.

I wouldn't -- why ?

As is stated .. odd numbers are existentially trial and test editions .. when stable and fully tested it will in this case be released as VM3.6......

You can test them if you want but I wouldn't on a live site

Unfortunately it is not stated anywhere near the place where you can download the stable and beta and test or whatever versions.
So users cannot see what is what.
A Joomla 3.5.3 is stable, and a VM 3.5.3 is not. There is no logic for someone doing the maintenance of a shop aside the main business of selling their products.
Very less to none of these people read a whole forum to understand that. They sell products, they are not developers.
They would need a hint on the download page, but there is nothing (anymore, there was earlier in life).

This leads to confused shop owners or in some cases to broken shops if they just update. They should be warned to do so on the download page.

Please use only stable versions with even numbers for your live shop! Use Alpha versions only if you know what risk you are taking.

Depends - since every shop is different, one should update to the latest release (with an odd version number) from dev.virtuemart.net only, after thoroughly testing a copy of the life shop, to make sure everything works correctly. Personally, I usually run the latest version on my live website, if I don't detect a problem while testing a copy of it on my local PC - including a number of test purchases of course. For testing locally I'm using an XAMPP for Windows version that uses approximately the same php version that is being used on the live server.

However, if your VM version 3.4.2 is working fine, updating to the latest odd number version is at the cost of additional testing time.
