Hi I have installed VM 3.0.16
What are the files I need to modify if I want to change the content of the order confirmation emails?

The mail template files are in components/com_virtuemart/views/invoice/tmpl/    - if you edit any be sure to use overrides.

Templates are used in combination with language variables which can also be overridden.

Why are you using an old version of VM? We are not far from having VM3.2 available.

Unfortunately I have the template that has problems with the new VM version, later I will change the graphic template and I will pass to the new version of VM
