VM3 Stockable variants

I'm used to the stockable variants plugin in VM2 and still trying to get my head around how to do it in VM3. Apparently it is better.

Consider a simple case. I sell clothes and they are all available in size S, M & L and I want to track stock for each size.

What do I use? Multi Variant? Generic Child Variant?

How do ensure that all products that I setup have sizes from the same list ? i.e. I want to standardise on S, M, L and not Sm, Med, Lrg or anything else. Can this be enforced like it was with the stockable variants plugin?

I've done plenty of searches and looked at the demo virtuemart store and am still confused.
