5. CANCELLED
6. HANDLED BY CUSTOMER SERVICE

The first three can be handled by Your payment method. You can also choose other combination SHIPPED for instance, this all depends on YOUR workflow.

How Do You handle Your orders?

The rest is up to You (Tou can add extra order statuses) and if Yo do not have any plugin that handles this (PAYPAL handles CANCELLED) You have to change theses by HAND.

Your workflow decides how it is done.

Change the order status in the payment method to payment completed. What kind of payment are You using and what are Your settings ?
