I have stockable variants but for some reason the add to cart button is missing:

Hello,

Have you enable for the backend under Configuration-> Shop to use only as catalogue?
Is missing for all products? do you have any template overrides? What is your configuration for availability?
Last you haven't mention your joomla and vm versions.

Do not have use only as a catalog
No template overrides
Availability is:  Displays 'Notify Me' instead of 'Add To Cart' button

Ohh,

Forget to mention that (that shows notify me instead of add to cart). The settings you have on the backend, so simple.
Notify me appears because you have select from the backend when product is out of stock do not show the add to cart button but Notify me...
Go to Configuration -> Shopfront and at the right top under  Action when a Product is Out of Stock please select the appropriate selection for your needs, like Products Out of Stock are order-able, no special action.

But the product is not out of stock? So why would it not show notify me? And the product is in stock so why wouldn't you be able to purchase. I am confused.

No the product is out stock

For sake of argument:

Product (parent)-
xl (child) - 2 units
s (child) -2 units
m (child) -4 units
l (child) -4 units

Yet the product shows out of stock? So what I did was add 12 to the parent product to make the product appear in stock, why would the parent not pick up from the children the amount in stock?

Maybe we are not on the same page.

I thought having a parent product with child products meant to be sizes (so you can keep track of inventory), the parent product displays the child product as an option (small, medium, large, etc). Is that not how the stock-able variants works?

Gotcha, for future releases this seems like something that needs to be looked at closer, a parent should be pulling inventory data from its children or have a plugin setup to do this for stockable variants in the sense of sizes/colors/etc. This is one of the bigger downfalls in my opinon of virtuemart for a major e-tailor.
