Payment Gateway based on currency?

Hi,

I'd like to configure my store to use a certain payment gateway when a specific currency has been set by the shopper, let's say Mexican Peso. One of the currencies I wish to use is not accepted by PayPal. Which files should I edit? Any tips or advice???
