Just as an update here.
Having spent a week on VM2 and getting all sorts of errors on my site. I've had to reluctantly lose that invested time and forget about VM altogether. Instead I'm now using HilkaShop. It is easier to set up and use and has built in help for each admin page, but more importantly than anything, I've had NO errors installing it on a fresh J2.5. It also exports products to CSV and imports. It can import from VM as well and create categories on the fly from reading your import file.
So my suggestion to all those presently struggling with VM is to at least try http://www.hikashop.com/ and see what you think before you've invested more and more time de-bugging VM2
