How can I change default order status ???
Default order status code is P and this order status cannot be delete.
All ne orders are mark with status code P so if you want you can change order status P name ;)

Yeh, you can change the names, but not the char indicating the status, because this chars are used to controll the programm flow and need also for the inventory
