In the configuration of Virtuemart you can choose to send the order mail as Html or plain text. But not both versions. I checked the files in com_virtuemart\views\invoice\tmpl to see if it's possible with an override, but I only see the output, not some if-statement to edit.
Is it possible to send an Html version as well as a plain text version?
