After that, the store became full-screen in width, despite the fact that the template has a fixed width
The menu on the left is glued to the edge of the screen (which doesn't look very beautiful) + the products themselves have become very large

You do not mention from what version you updated. You use a commercial template, maybe this it to old.

Maybe you adjusted the width in a virtuemart CSS file.
Try to take the CSS files from a backup and put them back into the corresponding virtuemart folder.
