Whan a physical product is sold, the value in In Stock does not decrement. Is there some setting I need to adjust?

The stock is not decremented until orderstatus is set to shipped or stataus with similar stock management. Order statuses have the possibilty to be assigned as, is available, is reserved and is removed. Easily put, in stock, reserved, taken from stock.
When the order has a status that has "is removed" assigned to it, it will decrease stock for You.
