Title: Language Missing id 1 - Field in Product.

Hello, how remove it (see image) without damage database ?
I have Joomla 3.7.3 and VirtueMart 3.2.3 .

You must set your shop language and set this language also in the BE. When you have still untranslated, just click on it (edit), then you can see the translation using the flag dropdown on the top left.

To remove a problem is not to delete entered data.

When you want to delete your entered data, I wonder about your problem. Use the checkbox, use "delete". I answered thinking that you want to remove the problem
