I know how to set up the custom field for Shirt Sizes......However, how can I make the first option "SELECT SIZE"-- not available for selection. I want the user to be forced to select a size and not be able to put the item in the cart with the custom field "SELECT SIZE" selected.

Try using the Custom Fields For All plugin
https://breakdesigns.net/extensions/customfields-for-all

There is a feature for required fields which do not allow, to continue without selecting an option

I do enjoy Breakdesigns Extensions- but there must be a way to do this using the Virtuemart core functions?
