I've got a shop for antiques and collectibles, and I would like to be able to display items which are no longer available. This is a different behavior than Out of Stock, as the items are unique and once sold, can't be restocked. Basically, I want to be able to show some items with no cart or notify button. Is this possible? I'm happy to put these sold items into their own product category if that would help.

Probably easiest to put them in their own category and use template overrides specific for that category to remove add to cart/notify etc
