I want to make the Phone number not required and remove the fax, and mobile fields.
Where can I edit this? I have been unable to locate the file where i can delete these fields or make a specific field not required. :-\

Take a look at:
Admin panel > Components > Virtuemart > Configuration > Shoppers fields.
I get as far as Configuration but there is no shopper fields option. The tabs are "Shop, Shopfront, Templates, Pricing Checkout, Product Order Settings, and SEO
On the left side under configuration menu there some more options ... take a look on the screenshot... did you search for it before post back?
